When you’re short on time, home-made pesto is such a great way to have healthy, vibrant tasting meals with little fuss. Very tasty and vegan!
Serve with pasta, boiled potatoes, cous cous, grilled veggies and wraps or whatever else you fancy!
Makes one jar
3 large roasted red peppers from a jar (or make your own ahead of time)
20g oil (from the jar of peppers)
1 handful of fresh mint leaves picked
1 clove garlic, de-skinned
3 tbsp sunflower seeds
Pinch of Himalayan salt
-Put all of your ingredients into a food processor and mix on medium to high for 2 minutes. Half way through, turn the food processor off and scrape the ingredients off of the side with a rubber spatular and put into the bottom. Mix again. If the consistency is dry, add more oil.
